Sous-vide cooking helps a lot with meats that are usually tough.
Then you can grill them.

It’s a good chance to try the Coffee marinade I did try a apple pie moonshine marinade and it tasted alright but not worth the chew
marinate for 24 hours minimum. Then beat the shit out of them.
Wine marinade should help break it down well
A marinade with alcohol works great as it starts to dissolve the meat a bit and then do a dry rub. Throw on the grill at max temp for 1 minute per side and then take off, get grill down to around 190F and throw back on and go for 20 minutes. Should be crispy on the outside and tender/fall apart in the middle. When I do ribs I marinade them in a beer (whatever beer, I use PBR.) and a lil` bit of bourbon for 12-24 hours and then press them dry and rub them down with my proprietary dry rub and they come out amazing.
