yeah its hitting the sound barrier, I think the color is is just off due to the quality of the picture. it's basically from pressure difference in the air and water vapor cant be held in those areas of the atmosphere. I Think its called a "vapor cone", and you can get multiple ones depending on the shape of the aircraft.
then the sonic boom is kinda about the air pressure equalling out and the water vapor goes back into the atmosphere... so when the plane actually passes you here the boom. something like that.
