This isn’t a huge thing, at least on modern jet airliners. A pilot friend told me the pilot doesn’t even need to touch the controls once the plane leaves the gate.

Depending on conditions that is largely true. I have military friends that are pilots... There is a "open secret" that sometimes they fall asleep (even in fighter jets) when RTB or doing patrol and overshoot... Sometimes by a few hundred miles.

This is why its a good thing we have good flight control systems (for the most part). It can be a extremely demanding job with very long hours. They should all be paid a lot better than they are.
