The red spot is not suddenly white.

The image from Webb is artificially colored. From the NYPost article:

The infrared images were artificially colored in blue, white, green, yellow and orange, according to the US-French research team, to make the features stand out.

Edit: They are stunning images from Webb, however!

That's false color, from an infrared image, you goofball. It's still red to the human eye through an optical telescope.

Soooo. The non-goof balls made the ‘Gread Red Spot’ white.

They substitute the actual color with colors and shades that each represent a specific temperature range, in order for people with a brain to be able to readily see which parts of Jupiter are hotter or colder than each other. A "temperature map" as it were. Sorry that went above your head, maybe you could be good at something else like chair moistening.
