Planes fly in a curvature in relation to the elevation in the same way cars are driven in their lanes.
The same as how the speed limit remains the same even if you go down hill you are expected to break.
Im willing to bet you actually havent taken a circular level with you on an airplane and watched the bubble for yourself and you are, in fact, just relying on what people told you.
In fact, I watched a Live stream and then when I next took a flight I videoed for about 5 mins going over the flat land.
You need to go much longer than 5 mins and you need to ask the pilot to temporarily disable the autopilot and ask him to stop manually correcting elevation.

Air control doesn't want airplanes changing elevations much like highway patrol doesnt want you going too fast on the highway oe changing lanes. If a plane never corrected for elevation it would go into a stall. They make planes to get to its destination safely.
