That's the color of Mars in the night sky currently, since it's so close to earth. With the naked eye one can't see the polar ice caps. But the color looks the same. Pretty cool.

Is the Mars picture accurate? It looks like one pole is snow covered

Normally, we can only see one polar ice cap at a time, due to seasonal changes and the angle of the planet.

I grew up hearing Mars had zero water so this confuses me.

On earth, ice is frozen water. On Titan, it's frozen hydrocarbons. On Mars, it's frozen carbon dioxide.
