Brussels sprouts are bitter lil suckers, and I tend to avoid them. The exception is with baked ham. You take a big old enamel turkey roaster, line the bottom with them, put the ham on top, then pack them around the sides, throw in a chopped onion and couple cups of water, seal it in aluminum foil, then put the lid over that, stick it in an oven at 350F, and bake til done. They are no longer bitter, but absorb the ham flavor.

My daughters always do those for the holiday meals. To be honest, I like Brussels Sprouts, but only in small doses. I can eat asparagus anytime though ...
