We do in frittatas. Ham and gruyere; salmon and tomato; etc. Broccoli is a great way to add body to this kind of dish.
Frittatas yes! But not omelets.
I do love salmon with eggs. I enjoy making salmon patties and serving them with over easy eggs. Yum!

Probably due to the fact that you've got to cook the broccoli first. Shredded carrots could be a fun addition. Yeah, broccoli, carrots, sardines, mustard omelette...

Doesn't cook fast enough. A quiche bakes and an omlet is basically fried.

That's probably a good solution to precook the broccoli and then add it to an omlette- sounds yummy with a bit of cheese and mushrooms...
Try roasting the broccoli first - give it a decent char.
Where are you from? I've only ever seen spinach quiche and also spinach in omelets.
I like broiled broccoli so it’s got some crunch to it. Had a pizza the other day that was chicken Alfredo broccoli, well done. Was tasty.
