Whenever I make mac n cheese I'll melt the cheese with a pint or two of heavy cream, that's always pretty amazing. A block of velveeta and some cubed swiss, lots of cream and butter in a double boiler poured over macaronis once melted. It's so bad for you and so good at the same time.
I always try to use whole milk whenever cooking, but I don't have any specific recipes. Just "I cook with, but don't drink it."
Needs bacon fat
Ehhhhh....I don't know how well that would work, I think that would make the cheese greasy and not add much. You may be able to get the fat to mix in, but you want the taste of the cream and cheese.
Now bacon sprinkled on top of the mac n cheese when it's done? Yes please.
