It lacks life or 'feeling'. Just like a singer will hit notes and vary notes by fractions of seconds and use emphasis when they sing the next notes to create interest and feeling is better than auto-tune. Overly digitized lacks life.

So you could tell the difference between the same electronic music played on a keyboard (multiple sessions layered) and sequenced? Or one sequenced with random delays added?

If it's dead generated music perfectly timed then it's going to be noticed. If you add another live element like a singer or other instrument or a drummer, then you can save the music by giving your audience something to enjoy. Random artificial delays (instead of purposeful emphasis and feeling) would be like talking to a crazy person, you'd get the sense something is off.
