It takes a ton of work to do it and keep it going for years, but weekly threads foster a sense of community.
We recently lost one of our own and it was felt throughout the community, even by those who no longer participate here.
Hell, we had to go to talk.lol to hold a recent thread, as Poal was down. (A first, so that's not too bad. We held a few on the Voat preview site due to outages.)
Pick a subject and keep at it every week and eventually people will participate. Early on, there were guitar thread where I was the only one sharing anything.
A subject people are passionate about will help. I'd say something non-political, so that people can just relax and appreciate their hobby/passion.
There's no way you can do it by yourself. You will burnout and you will have scheduling conflicts. One of the things you know about the FNGT is that it starts at the same exact time and on the same exact day and in the same exact place. One person can't do that. It's tough to do with two people. Three people was great and we'd have someone who was able to archive our work.
Also, if you are going to decide to create a second site where you do things like archive and orient, do that as soon as possible. It's a whole lot of work to go back through old threads to catch that up. Then, be sure you keep that maintained diligently. If it falls behind, it's hard to catch up.

If it's places we've held the guitar thread, we have a complete archive of every single thread we've ever held, including where it was held when it wasn't our regular spot.
