What long term trials have been conducted for mRNA injections in humans?

Given the low mortality rate of COVID, why wouldn't it be better for people to get natural antibodies rather than an experimental mRNA injection?

Merck discontinued their vaccine research in Jan, 2021 because the immune response was inferior to that of natural antibodies. Why wouldn't members of the public adopt this strategy?
