The ancient Greeks and Romans planted cactus and other spiny plants under windows. This deterred thieves and other would be intruders from just going through an open window. Glass was a luxury, so windows were holes in the walls that allowed sunlight during the day, and ventilation at night. When I first heard of this practice, I was amazed at the ingenuity of using thorny plants as decoration and security.
What USDA Zone are you in? That will dictate what plants grow well.

bougainvillea is a good choice. The thorns are big and brittle so bits break off in you.
Bokor i think is the word, like Haitian voodoo witch doctors and their African progenitors, grow psychedelic vines around their homes so people creeping on them start tripping. Look into the Bokor

i have experence with this plant from stealth camping in southern california. it is as though you have bed bug bites. the itching goes away and comes back. tiny little hollow needles carry some itchy-histamine stuff.
if walked through a large patch then the next couple weeks they will deal with a lot of itching and lose sleep, will have to apply ointments but it wont stop it.
the leaves are edible(pretty sure)
You have to burn the spines off and can boil the shit out of them for tea. Stalks are a good source of moisture.

Multi flora rose, black berries, raspberries, goose berries, Roses, especially wild roses. I would go ahead and include some serpentina wire inside the bushes to enhance the inevitable bloodletting of those who dare trying to go through. Spikes in the ground under them as well.

Where are you located? Geography and climate makes a huge difference.
If you are in the California area I would highly recommend poison oak with California wild rose and yucca mixed in. The poison oak appears to only affect humans poorly. Birds love the berries and herbivores like the leaves. The California rose grows like a vine and is thorny as shit. The yucca is sharp enough to stab right through jeans without any resistance at all. Various cholla are great too, as they're like cactus except the spines are barbed, which makes them painful to remove.
