Reading about it. I really use the camera on my phone a ton. More than text and call. Is it possible to wipe my phone and use Linux or Ubantu on it? Then I still get the camera but the benefits of the OS? I maybe asking for too much.

nope, hardware has to be FOSS. get a canon dslr. you'll appreciate the different lens options.
