Most games aren't CPU limited. You'll be fine with your i7. I'm running an old i5-2500k clocked to 4GHz and a Vega 56. If I upgrade it'll be to buy a GPU with raytracing.

That depends entirely on your video card, refresh rate, resolution and other in-game video settings. Almost all the games I play are limited by the CPU and I have a 9900K.
