Relying on a customer's printer to print an invoice is just asking for headaches. Not to mention 9/10 there's not enough ink left for a single sheet.
You'd have to "install" every printer each time. Each one is different, some will work great with wifi printing. But in my experience old customers still mostly rock old USB only printers that are basically non functional. However for them spending 45min to print a recipe and hand feeding a pages otherwise it won't work is not a reason for them to get a new $150 printer.
If you want to print onsite, bring your own printer and find a way to USB connect to your tablet.
I'd recommend a windows tablet, but you said you need Android apps so, whatever I guess.

This exactly what I'm getting at. I agree with everything else.
Get at least an Android 9 based tablet with wifi, bluetooth, and cellular available. https://www.amazon.com/VASTKING-KingPad-1920x1200-Resolution-Bluetooth/dp/B08T8XZPC1/ref=psdc_1232597011_t2_B08SMKWC1Z
