This is the page (docs.microsoft.com) that leads to the page you've shown. It's documentation for OEM/ODMs including windows with the PCs they make available for sale.

If you look at the Windows 10 21H1 "Supported Processors" (docs.microsoft.com), it only goes back to the 5000 series. I know a friend on a 2000 series i7 that is running win10 just fine.

Even if true, you simply can carry on using Windows 10.

Any particular ones you're concerned about? It's normal for an OS to not support older processors whuch are missing features the OS needs to function.

My version of Intel's i7 chip is not on the list. Does that mean I can run Windows 11?

32 bit is GG, this list will change.

Seems like MS is turning into Apple, which just decides on a whim to drop support for older CPUs when they release a new OS.
