What they DON'T tell you is that as long as the encryption has a root certificate, not only can the operators of the network read everything, they can cross-sign certificates for any agency to read all messages as well. I was always surprised by Snowden not taking the time to explain this to people when recommending Signal / Telegram / etc. If you don't control the root cert for the encrypted messages you are sending, someone else does and that person is reading your messages.
