16 bit with a good DAC is better than most people over 30 can hear. 24 bit with a good DAC and a high sample rate is better than pretty much anyone can hear.
Vinyl sounds neat if you're looking for a vinyl sound. But even the people I know that transcribe it for digital storage do a lot of processing before storage.
