I am not that familiar with the project, but I guess it's a valid option if you want to minimize interaction with Google as much as currently possible. A problem that the Linux Phone would solve more drastically though.

There is already Ubuntu Touch.
I have not tested it yet, and I hope it has the full bash terminal.
But Google sadly has removed many useful features and added unnecessary restrictions over time.
