If you haven't tried them you probably should, they need to be cooked before eating but they're still my favorite mushroom. They're a bit chewier than button mushrooms in a meaty way and packed with great flavor. Chop them up and slowly fry them with an onion until the onion is fully carmelized then throw them on a steak.
