Very much so. I also make a crawfish enchilada that just substitutes crawfish for chicken, and adds cajun spices instead of whatever tex-mex mix you use. Really good.

No, I just use out of the can. "Tony Chachere's Original Creole Seasoning" is the only one I've found here, but it's good enough I didn't go trying to make my own.
