Behold my creation! Poal 4 Kingdoms United bacon-potato-bread-pie!

1 Deep dish ready-made pie crust, blind baked 1 Lb Thick sliced bacon cut into small pieces and cooked crispy 1/2 Lb Smoked ham, diced into small cubes 2 Cans Sliced cooked potatoes 1 Bag of croutons of your desired flavor (I went with onion and garlic) 1 Can cream of chicken soup 1 Can diced green chilis 1 Small can cream style corn 2 Cups of roughly chopped spinach 8 Oz Neufchatel cream cheese 1 Small onion, diced 2 Cloves garlic, minced 1/2 Tsp Cumin 1 Tbs Dried Oregano 1 Tsp Smoked paprika Salt and pepper to taste

Sautee ham and onion till onion is lightly browned. Add garlic and cook for 1 minute on medium-high. Add green chilis and cook an additional 3 minutes. Reduce heat to medium and add spices. Mix spices around to activate them approximately 30 seconds. Add Neufchatel cheese. Stirring constantly, melt the cheese entirely. Add cream style corn and cream of chicken soup and chopped spinach. Cook for 5 minutes on medium then remove from heat. Add in 3/4 of bacon pieces and mix well.

Add enough of your sauce mix to cover the bottom of your pie crust. Add potato slices as one layers. Add sauce and potato layers until you have exhausted both. Top with croutons, remaining bacon pieces and your melting cheese of choice. Bake at 300 F for 20 minutes or until everything is heated through. Let stand for 10 minutes after removing from the oven. Serve and enjoy.

I would make changes to it on my next run. It was too potato heavy and tasted more like a loaded baked potato. I would increase the bacon and ham, switch the Hatch green chilis to sweet red peppers or jalapenos and add more cream of chicken soup or perhaps just heavy cream. Maybe add a sharper cheese in the filling rather than just on top. It was a bit drier than I wanted but I didn't want it to be runny so I didn't make it too creamy. It was good overall but it can certainly be better.

I know that rule. The Neufchatel is a sweet-ish young cream cheese and it went into the filling. The top was generously sprinkled with sharp cheddar. The filling was sweet but savory and the croutons, bacon and cheddar on top added savory contrast and the pie shell brought some neutrality to the whole dish. I'd make some changes to it next time though (see the thread under MrForeverAlone's comments).

With the amount of bacon/ham I would expect it to be salt-heavy. I don't know what you like for salt levels but what did you think?

The salt was just right. Not shown in the pictures is that there are actually two pies. The filling was enough to fill two pie shells perfectly so each pie is half the total bacon and ham. Also, the ham and bacon we get from our local meat purveyor are lower in sodium and taste lighter than grocery store varieties. We didn't add any salt as the filling mixture was just right during tastings along the way. The croutons...well those were too salty but only one pie had them and they were only on the top.

I appreciate the update. Saved me about 12 hours of driving, shopping, preparing, cooking, and cleaning up. Not to mention the 300 dollars in ingredients.

We had all but the pie crust, Neufchatel cream cheese and cream style corn on hand so I can't estimate the true cost of this meal. The filling actually made two pies, but my wife decided we should do one without the croutons because that would be too much. I guess my wife isn't a fan of the Bread Kingdom. Overall the flavor was good but maybe not worth the total cost if you don't already have most of the items on hand.
