Ingredients
1 chilled Pie crust
4 cups ripe tomatoes (Roma or plum)
1/2 cup mayonnaise or Greek yogurt.
1 cup shredded cheese
4 slices bacon (Cooked)
1 cup chopped bell pepper.
1 medium minced onion or equal amount of Shallots.
Prep
Preheat your oven to 350°F.
Put your Pie crust it into a pie pan. Use weights or a fork to prick the bottom, then bake for 10-15 minutes until it's lightly golden and set.
In a medium bowl, mix together the mayonnaise/yogurt, shredded cheese, bacon, chopped bell pepper, and minced onion/shallots. Season to taste.
Layer half of the sliced tomatoes into the baked crust, followed by half of the cheese mixture. Repeat with another layer of tomatoes and the remaining cheese mixture on top.
Place the pie in the oven and bake for about 35 minutes, or until the top is golden brown and bubbly. Allow it to cool for 10-15 minutes before slicing and serving.
