With egg products, pasteurization is primarily to kill salmonella, the risk of which is increased when the integrity of their shelled package has been breached. And if the product has been denuded of yolks, what's the point? Crack yer own.

I would be happy if they had a version that’s 100% egg including the yolk but that only exists with added ingredients. I wonder why that is.
