You have to give cast iron time to heat up. Contrary to what most think, iron is a lousy heat conductor, but once it gets hot it holds heat really well.

Right, but if you want a low even heat it is more trouble than it is worth. I love cast iron, but different tools for different jobs.

You are right. I have a wok and a couple carbon steel pans that are better for certain things.

Skip it. The out gassing from that stuff has killed people's birds. Don't stand there breathing that in.
