Season iron? It's a Viking thing.

And you do have to regulate the cooking temp.

Most people use too much heat and lose all non-stick.

I also use stainless cookware and it also requires the right temp to prevent sticking.

Pre heating the pan to the right temp is crucial. And a drop of water should dance kn the surface at the proper heat. Not explode and evaporate right away.
