Cajun food is way overhyped. I've eaten "authentic" Cajun food from old family LA home and restaurant cooks and found them to be mediocre at best. The families who promoted how good their food is really built it up to be something amazing and truly extraordinary. What it actually brought to the table was slightly better than a fast-casual restaurant serving 'cajun' food. I just don't get the hype. I've had mediocre mexican food that beats it hands down for spice use, heat and overall flavor. Hell I've even had semi-authentic German food that beats it in those same categories. I just don't get why people rave about cajun food so damned much.
“Cajun food” is mostly seafood dishes which is why you must be in the area to have good Cajun food. The locals still catch a lot of the seafood and bring it to market so it’s very fresh. That’s how it is in southern Louisiana at least.
