border jumpers can't afford to raise beef...so they grow up eating tacos with beans instead of meat. lots of rice in shells too. rice is cheap, gives the feeling of "full" and it's high carbs so they can get back out to the fields and have sustained energy in the sun.
like anything else...if you grow up eating it, your tastes adapt to desire it . (think "cajun country" with eating mudbugs and alligator...or the northeast and eating lobster or west virginia and eating dirt
