Whenever I've been accused of being a racist, I just answer "Yes, I am." You'd be surprised how they have no answer to that.

I also have fun calling everything racist to dilute any meaning the word has. Library doesn't have the book I'm looking for? That's racist. Store is out of ammo? That's racist. Asshole driving 40 mph on the highway? That's racist.
