for the lunar missions, there weren't any compressors in space. it was all compressed before being sent into space. it's an excellent engineering question, for sure.

I'm reading about the apollo now and it says they would sublimate water in the vaccuum of space to cool air.

yep! same concept. they brought raw liquid oxygen and raw liquid hydrogen and conbined them to produce electricity and water. breathe a bit of the oxygen, boil whatever you don't need off into space and all the while power your fuel cells along the way. no electric air conditioning compressors needed for cooling since the process of expanding the liquids into the vacuume of space is a cooling process.
