I'm concerned about the possible long term health risks of eating any significant amount of insects. Insects contain significant amounts of Chitin (their shells), which binds to enzymes in our digestive system, but cannot be broken down. It also seems to have a significant effect on TNF-alpha (Tumor Necrosis Factor), which is an important cytokine related to the prevention of cancer. In certain conditions, where the immune system is unbalanced, it can be used as a treatment. But it's inclusion in the diet of healthy people may have unknown effects, including cancer and autoimmune diseases.
