I don't really understand the difference between dog, horse, or cow. If the taste could not be distinguished, I don't see why consuming the meat of one type of animal would be considered more or less ethical then consuming another type of animal.

Unclean animals only had (have) one stomach and didn't digest their food well, supposedly making it less fit for human consumption.
A horse has a less complicated stomach and digestion than a cow (they used to go by how the hoof was and cud chewing).

Some of it is cultural. But some things I think human nature tells you don't eat. Roaches, rats, snakes.
I don't like to eat bottom feeding fish, they're unclean as well. Wouldn't eat a vulture cause they're scavengers. If I was starving it would be different.
Pigeon and quail eggs are more 'clean' than chickens who scavenge and will eat almost anything. It's the easily fed and raised animals that are staples, bacon and chicken eggs.

Just because there is a lawsuit doesn't mean it's true. We've seen this same bullshit lawsuit before. They are hoping they get a small settlement because subway doesn't want to go to court and discuss their meat quality even if it is 100% tuna (which it is). They are hoping a few thousand dollars ( or maybe they'd settle with just shy of one), to not go to court.
