What's wrong with FMJ? Good for practice, and you really only need one box of hollowpoints for your carry piece.

Thats the only thing its good for is shooting paper. Yeah a guy needs to do a lot of that too, but my point is quality defensive and hunting ammo is still in short supply. As are primers and brass. Powder is getting better. I think were seeing the cheap bulk ball ammo the most because its what the panic buyers will stockpile. Nobody is buying 5000 rounds of good sierra game king or nosler accubond or swift etc, bullets maybe but not in factory ammo, too expensive to do that shit.

How much hunting are you doing? It's an honest question - you may well be going full live-off-the-land where you actually go through a large quantity.

For defensive use, short of a civil war starting, you basically buy a box or two and you're good until you feel you need to lifecycle it out. I'm not certain how often most people replace the hollowpoints in their carry weapon, but I can't imagine it's often. That'd be on the scale of years. Even if ammo is hard to come by and super expensive, paying e.g. $1/round is peanuts when it's an every 5 years thing or what have you.
