Now change the dynamics and let the knife guy be the victim and see what happens

The funny thing is the videos would look similar if the guy with the gun was given a knife instead. In terms of reaction time and signaling I guess it depends on where you carry, in some instances it could just seem like the guy with the gun is scratching his ass until gun appears. Appendix carry not so much, but knife guy probably wouldn't have the time to react in either case.

During the colder months, I usually carry my knife in my jacket pocket with the marline spike open, and my hands are on it, resting in my jacket pocket. So I'm not really signaling anything, but I'm always ready, if need be. It would only take a few seconds for me to stab someone in the eye.

The attacking force allows for the element of surprise, typically the brain takes 2 seconds to acknowledge the threat and begin reactionary measures. Knife guy already knew his intentions. Knowing I'm being attacked with a knife in the video, distance is your friend. If trained and great reaction skills one could have stepped into this and disarmed or crushed his throat. Rule no 1 in a knife fight is Knowing you're going to be cut. Same with a dog, the dog is going to bite you. A dog will bite the first thing it can, Knowing this you train to attack back, go on the offensive.
