Do airlines have a way to weigh after all have boarded by looking at an airplane internal weight scale of some sort? I once was on a plane after all boarded and a couple people were told to get off because there was too much weight on the plane. Embarrassing for those asked to get out if there was only someone estimating which people to get rid of to meet the weight limit.
I'm guessing there would be pressure sensors on the landing gears that could be used to get the plane's gross weight. Subtract tare, and you get the net weight of fuel, passengers and cargo.
I'm not an aviation expert or anything, but I believe they estimate the weight of the passengers. I believe there are standard tables of some sort.
I think they have the capability to weigh an aircraft by putting something like a scale under the landing gear, but I'm not sure that's used a lot.
