So what has changed about our genetics, lately, that's made everyone fat— where before, the only fat people around were some mega-rich merchants and kings? It's not like modern "food science"/industrialization has done anything to harm our bodies, or anything.

All this to say: you still can't be fat at a caloric deficit. Even if it's "harder" to do. You know what else is hard? Surviving a heart-attack.
