One thing I would recommend is dipping oil, I really like the parmesan infused types https://sutterbuttesoliveoil.com/product/parmesan-dipping-sauce-and-salad-dressing/, it would go great with the bread

i’ve always had better results with the dutch oven than trying to create an oven plus steam. sometimes the bottom crust gets a little too hard so i usually put a pan under the dutch oven after i take the lid off
a pan of water? or you just put in a room temp pan and set the DO in it?
yeah usually i did a pan of water or threw ice cubes into a cast iron. never worked as well as dutch oven + a spritz of water
