I just cut this loaf. It is the culmination of 6 or 8 months of work, practice, successes, failures. I knew I was getting very close for a few weeks now.

I'm very happy with this loaf, I'm not even sure if it could be any better. The flavor is excellent, the spring is perfect, the crumb is beautiful.

I wish I could give you all a slice of the heaven I have created!!

My wife messed with it for a while. It's not easy at all, so I can appreciate your efforts. We never achieved greatness but we still have the starter in the freezer and keep it alive.

That's the key to it, we never seemed to hit it at the right time.
