I didn't have a chance to serve these with a meal, but I just had to cook them up and give them a try. I did these last week the day after I harvested.

Sauted mushrooms until browned and most of the water was cooked out Added some chopped garlic Deglazed with some sherry Reduced to about half Finished with a couple tablespoons of butter.

I first took fumducks advise and ate just a small portion to see if I would have any adverse reaction. About an hour later gobbled down the remainder.

My impression is that Chicken of the Woods is an excellent mushroom and could absolutely be used as a replacement for just about any dish calling for mushroom. The specimen I had was very young and it did not require much trimming. It was very tender and moist.
