It's not wasted if you feed it to your chickens who then make eggs with them. You can and must give them back the eggshells that they will eat too. Potato skin is ok in some preparations but not ideal in many others. Carrot peels are not tasty in bigger carrots.

Vegetables and starches should only be eaten for how much they can add to a meal regarding taste and texture. They are nothing more than a vehicle for other foods.
You should be getting 100% of your needed vitamins and minerals from meat.

There's not much nutrition in potato skins, but there is solanine, which is toxic. There's not really enough in them to do much, but frying or cooking the skins can concentrate it and potentially injure those who are sensitive to it.
Compost the skins or feed them to animals that aren't affected by the toxin.
Potatoes are loaded with nutrients and a great source of potassium. Most of these nutrients are in the skin.

Glycoalkaloids are the primary toxin in potatoes. White potatoes are a nightshade and most of the associative anti-nutrients are concentrated in the skin. So, if your going to consume them, peel them first and feed the skins to the chickens or the compost heap.
