My wife is feeling under the weather so i figured i'd make dinner for her. began to make a loaf of bread in the bread machine then realized we were out of bread yeast. so i used a packet of 71b wine yeast. the bread turned out better than i'd have thought. tastes a bit like sourdough. i made the most amazing french toast with a side of self cured bacon. happy little accidents sometimes happen in the kitchen.

Have you tried adding a little baking soda? I forget who, but someone once told me to add some for that very reason.

I've tried 1 and 2 tablespoons, guess I will just add more until it is light and fluffy enough.

Make sure to add just a little bit of lemon juice if you use baking soda. It needs the acid to properly work. Just don't use too much.
