Big pot

1 lb hamburger 1 lb chopped bacon or fat back 1lb game meat venison if possible diced, or chuck roast diced if deer(elk etc) meat isn't available.

4 poblano peppers chopped 3 Anaheim chili's chopped 6 each Red, yellow, and orange baby bell peppers chopped 6 jalapeño peppers chopped 2 red onions chopped 1 habanero peppers chopped A few hatch chili's if available chopped. Piquin and arbol chili's if available or use half a bottle of cholula it's easier.

2 cloves garlic chopped 2 cans black beans 2 cans dark red kidney beans 2 cans refried beans 2 cans tomato paste 2 cans crushed tomatoes 2 cans diced tomatoes

Chipotle, ancho, cayenne, smoked paprika, black green white pepper, soy sauce, thyme, cumin, coriander, salt, lime juice, and probably a couple other seasonings I'm forgetting because I'm in bed not in my kitchen.

Oh toss in a little molé as well for earthy blending flavor.

That's a big fucking batch of chili!

Looks good AF though. I've never made chili with refried beans in it, that is interesting.

Any reason for red onions vs yellow? I usually use yellow for chili.

I like red onions. You can use yellow but I like color and anthracynine(idfk how to spell ot) is good for u

I add a small amount of cocoa powder to my chili that gives it a nice amount texture, the mole bumps it up a couple notches. Corn masa is another nice touch. Do you mean pinto beans instead of refried?

No. Refried beans. It thickens it while giving it pinto flavor. U want that beany paste not whole pintos

After you brown the meat yeah. You don't have to brown it but I prefer it

Hatch chili powder is available online. That and chipotle chili powder are necessities in my kitchen.

Also, the can sizes and shit matter. Idk what the sizes I use are but balance matters. It should be more tomato than bean.
