Sounds good. I make something similar without the neachatel cheese and mine adds white pepper. The cilantro and lime really has a great taste.
Yes I made it tonight, with no alterations other than my chicken was some kind of fiesta something flavor rotisserie from the deli. Add double the fresh sweet corn and beans, maybe triple the beans. I'll also not include the dark meat next time it was a little off putting texture wise. I'll just eat it while I shred the chicken instead!
I was hesitant about the low fat cream cheese, I really don't use cream cheese often so had no idea how it would go. But it was great.
Both of my kids, who are very picky, devoured it and had another bowl about an hour later. We didn't even add cheese, I think it would've taken something away. There's no more left, so I also will double it next time.
I make a pretzel bread and shape them into bread sticks that pairs nicely with most soups. Fat free sour cream vs full fat is kinda like water tasting skim milk vs whole milk...
Did you mean cream cheese instead of sour cream?
We used tortilla chips crumbled into the soup. Gave a really nice crunch. Pretzel bread may go well with it as well.
Just posted my pretzel bread recipe. Also looked at my chicken chili recipe and mine I add a few cans of white kidney beans. The cannelli beans are great but you have to add them towards the end or they turn to mush. The white kidney beans hold their shape better.
