I actually pan fry (with much less oil) my chicken and the result amazingly better than using a deep fryer.

I always use a mix of sunflower seed, avocado and olive oil (I let the chicken marinate for 24 hours and do 2 passes at lower temp).

Then I use that oil to fry potatoes and sweet potatoes, served with a homemade olive oil (and sometimes garlic) mayonnaise.

i use leaf lard to fry my chicken. then when it has cooled, strain it and keep it in the fridge for the next batch of frying.
