Im not talking about forming them, mixing it up.

Not really then. I've seen some where pork shoulder and the spices were ground together in the chopper, but if you're starting with ground pork (or other meat) then the best way is to double bowl it (put your mix in a bowl and put that bowl in a bigger bowl of water and ice to keep the meat cold) and squeeze with your hands. Those cheap single-use plastic gloves you see in foodservice are good for this.

Actually I find it a bit easier if the meat isnt cold, Im talking cheddar,sausage,biscuit,garlic,hot sauce and a little bit of milk to make mixing easier. But its a pain in the ass to mix it all.
