I usually stay far away from keto baking (or any baking) just because I don't think it's worth the time, effort, quantity of dirty dishes generated, etc. just to simulate carbs. I have also ceased to desire sweet things after 3 years on keto.

However, my sister and I were joking about foods our parents used to feed us and the topic of Zebra Cakes came up (the little debbie ones). Well, she bet me I could make some keto-friendly ones.

I used pretty much verbatim. Only changes were that I paired up "bottoms" to make near-cylindrical cakes vs. re-assembling "muffin-shaped" cakes, I forgot to grind up the erithritol into powder, I needed much more almond milk to thin out the chocolate frosting, needed more coconut oil to thin out batter.

IMO the wheels fell off at the frosting stage. I got impatient and didn't get the frosting smooth.

Comparison: Little Debbie has 330 cal, this has 300. Little Debbie has 47 g carbs, this has 7 g (per cake).

I wouldn't make them again but not because they weren't tasty.
