Butter, if sealed in a vacuum bag, will keep for a long time frozen.
I switched to a combo fridge/freezer a while back so I have zero spare freezer space any more.
I think I'll keep the old full size freezer just in case this gets really bad
Get a battery system that will run it for a minimum of two days, and enough panel wattage to charge said battery system in one day. expect fuel for generators and the power grid to be iffy.
I got a generator a few years ago because the power in my area is pretty variable and at the time I didn't want to lose a 6' freezer full of food, unfortunately now my car is a diesel it's awkward to maintain fuel for it
Solar panels are an option but that's several thousand to install vs £100 worth of food, and I've got a lot of other house stuff to complete before I think about that

Just buy ghee, its shelf stable.
Butter in the freezer is fine with me.
