I remember once being taught that you can prevent someone from hammering down during a handshake by pressing on their wrist like this. Not sure that's what is happening here, but it is a thing.
Also a form of conversational hypnosis.
You break their internal script when anything about the encounter goes sideways or is unexpected, even small details like how you shake hands.
