"Mutation" is an expert word. Scientists use the word "variant". If a variant is so much different from the original that it has new features, it is a new "strain". A new strain of SARS-CoV-2 would be called SARS-CoV-3 or so.
After an infection, the immune system can produce maybe 1,000 different antibodies. After vaccination maybe 200. The variants can escape maybe 10 or 20 of them, not enough for evading the immunity.
